Hard work does pay off

Some people say that being a parent is the hardest job in the world and I am inclined to agree. I often worry about the decisions we are making in relation to the kids and wonder if we are making the right ones. Even in the everyday I worry about how much time the kids watch telly, if they get time outside, if we read some books and practice our colours, shapes, letters + numbers and especially how much fruit and veg they eat. Some days we do better than others and some days we get totally surprised and realise all our hard work really is paying off.

Today was one of those days! I know it doesn’t sound like much but our Isabella ate her way through the remains of a bowl of coleslaw, or ‘stripy salad’ as it has now been called!

This is the recipe which is super easy to make and nice and healthy.

Stripy Salad (Coleslaw)

  • 1 apple, cored and grated
  • 2 fat carrots, peeled and grated
  • 1/4 small red cabbage, sliced super finely then chopped into shorter bits
  • 2-3 tbsp of salad cream

Mix all the ingredients into a big bowl then serve!
