Back to baking, a recipe AND an invite

Well, back to normal for most of us today, hope your day was a good one.

Our 20minutes in the garden was wonderful

  • We have smiled more
  • Between me and kids we have eaten 1 banana, 2 apples, large handful of raisins, 2 satsumas, 2 carrots and lots of peas – think that will do as five
  • Don’t think I’ve had enough water still
  • We spent 20 mins outside between the rain – more than enough as it was freezing
  • No extra tidying done
  • No crafting done
  • Said “I love you” lots
  • Definitely more relaxed
  • No money made but also none spent
  • Only 1/2hr of TV watched

I did however get to bake a cake, one of my favourites, a banana loaf cake.

There were three muffins but I ate one before I thought of taking a photo (oops)

Banana Loaf Cake

  • 250g butter
  • 250g soft brown sugar
  • 2 eggs, beaten
  • 3 ripe bananas, mashed
  • 250g plain flour
  • 1tsp baking powder
  • 1tsp bicarbonate of soda

Preheat oven to Gas 4/180C

Cream the butter and sugar together until light and fluffy. Add the eggs and banana and combine, this may look a little curdled but don’t worry. Add the dry ingredients a little at a time, mixing well with each addition.

Pour into cases and bake for:

  • Loaf – 45mins to 1hour
  • Muffins – 15-20mins

This recipe makes one loaf plus 3 muffins OR about 15 muffins.

    You can get bread pan cases? Awesome! Must look for some here, otherwise Hubby will have to get some sent to me! And I’m gonna try your banana bread recipe and see how it compares to mine 🙂 Sx
